Crispy, golden-brown Idaho potatoes infused with the rich, savory flavor of roasted garlic. Perfect as a side dish for any meal or a stand-alone snack.
Ingredients:
- 2 lbs Idaho potatoes, peeled and cubed
- 1 whole garlic bulb
- 3 tbsp olive oil
- 1 tsp salt (adjust to taste)
- ½ tsp black pepper
- 1 tsp dried rosemary or thyme (optional)
- Fresh parsley for garnish (optional)
Instructions:
- Prepare the Garlic:
- Preheat the oven to 400°F (200°C).
- Slice the top off the garlic bulb, drizzle with 1 tsp olive oil, and wrap in foil. Roast for 30–40 minutes until the cloves are soft and golden.
- Prepare the Potatoes:
- While the garlic roasts, place the cubed potatoes in a large pot of salted water. Bring to a boil and simmer for 5–7 minutes. Drain and pat dry.
- Season the Potatoes:
- Toss the potatoes with olive oil, salt, pepper, and rosemary or thyme in a large mixing bowl.
- Roast the Potatoes:
- Spread the seasoned potatoes on a baking sheet in a single layer. Roast in the oven for 30–40 minutes, flipping halfway, until they’re crispy and golden brown.
- Add the Garlic:
- Once the garlic is cool, squeeze the roasted cloves out of the bulb and mix into the potatoes during the last 5 minutes of roasting.
- Serve:
- Transfer the potatoes to a serving dish, garnish with fresh parsley, and enjoy!
