Roasted Garlic Idaho Potatoes Recipe

Crispy, golden-brown Idaho potatoes infused with the rich, savory flavor of roasted garlic. Perfect as a side dish for any meal or a stand-alone snack.


Ingredients:

  • 2 lbs Idaho potatoes, peeled and cubed
  • 1 whole garlic bulb
  • 3 tbsp olive oil
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 tsp dried rosemary or thyme (optional)
  • Fresh parsley for garnish (optional)

Instructions:

  1. Prepare the Garlic:
    • Preheat the oven to 400°F (200°C).
    • Slice the top off the garlic bulb, drizzle with 1 tsp olive oil, and wrap in foil. Roast for 30–40 minutes until the cloves are soft and golden.
  2. Prepare the Potatoes:
    • While the garlic roasts, place the cubed potatoes in a large pot of salted water. Bring to a boil and simmer for 5–7 minutes. Drain and pat dry.
  3. Season the Potatoes:
    • Toss the potatoes with olive oil, salt, pepper, and rosemary or thyme in a large mixing bowl.
  4. Roast the Potatoes:
    • Spread the seasoned potatoes on a baking sheet in a single layer. Roast in the oven for 30–40 minutes, flipping halfway, until they’re crispy and golden brown.
  5. Add the Garlic:
    • Once the garlic is cool, squeeze the roasted cloves out of the bulb and mix into the potatoes during the last 5 minutes of roasting.
  6. Serve:
    • Transfer the potatoes to a serving dish, garnish with fresh parsley, and enjoy!
