- 3 ripe bananas, mashed
- 1/2 cup (1 stick) unsalted butter, melted
- 3/4 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon (optional, but recommended!)
- 1/2 cup sour cream or plain Greek yogurt (for extra richness)
- 1/2 cup chopped walnuts or chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a large bowl, mix mashed bananas and melted butter until smooth.
- Add sugar, eggs, and vanilla extract. Stir until well combined.
- In another bowl, whisk together flour, baking soda, salt, and cinnamon.
- Slowly add dry ingredients to the wet mixture. Stir gently until just combined—don’t overmix!
- Fold in sour cream and optional add-ins like nuts or chocolate chips.
- Pour batter into prepared loaf pan and smooth the top.
- Bake for 55–65 minutes, or until a toothpick comes out clean from the center.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
