Rice with Chicken


A comforting and flavorful dish made with tender chicken and seasoned rice. This easy-to-make recipe is perfect for a hearty meal, combining the richness of chicken with aromatic rice for a delicious and satisfying plate.

Ingredients

  • 2 cups of long-grain rice
  • 4 chicken thighs (bone-in or boneless)
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, diced
  • 1 tomato, diced
  • 4 cups of chicken broth
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1/2 tsp turmeric (optional for color)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Prepare the chicken:
    Season the chicken thighs with paprika, cumin, salt, and pepper.
  2. Cook the chicken:
    Heat olive oil in a large pan over medium heat. Add the chicken and sear for 5-7 minutes per side until golden brown. Remove and set aside.
  3. Sauté the vegetables:
    In the same pan, add the chopped onion, bell pepper, and garlic. Cook until soft and fragrant, about 4-5 minutes. Add the diced tomato and cook for another 2 minutes.
  4. Add the rice:
    Stir in the rice, coating it with the vegetables and oil. Cook for 2 minutes to toast the rice slightly.
  5. Add the broth:
    Pour in the chicken broth and bring the mixture to a simmer. Nestle the chicken thighs back into the pan on top of the rice.
  6. Cook the rice and chicken:
    Lower the heat, cover the pan, and let it simmer for about 20-25 minutes, or until the rice is cooked and the chicken is tender. Check occasionally to ensure the liquid doesn’t fully evaporate; add more broth if necessary.
  7. Serve:
    Once cooked, fluff the rice with a fork and garnish with fresh parsley. Serve hot and enjoy!
