Reuben Bake Recipe

A Reuben bake is a delicious casserole version of the classic Reuben sandwich. Layers of corned beef, sauerkraut, Swiss cheese, and rye bread are baked together to create a hearty and flavorful dish that’s perfect for a family dinner or potluck.

Ingredients:

  • 6 slices of rye bread, cubed
  • 1 lb corned beef, thinly sliced
  • 2 cups sauerkraut, drained
  • 2 cups Swiss cheese, shredded
  • 1 cup Thousand Island dressing
  • 1 cup milk
  • 2 large eggs
  • 1 tablespoon Dijon mustard
  • 1 teaspoon caraway seeds (optional)
  • 2 tablespoons butter, melted

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Layer Ingredients: Spread half of the cubed rye bread in the bottom of the prepared baking dish. Layer with half of the corned beef, half of the sauerkraut, and half of the Swiss cheese. Repeat the layers with the remaining bread, corned beef, sauerkraut, and Swiss cheese.
  3. Prepare Sauce: In a medium bowl, whisk together the Thousand Island dressing, milk, eggs, Dijon mustard, and caraway seeds (if using).
  4. Pour Sauce: Pour the sauce evenly over the layered ingredients in the baking dish.
  5. Bake: Drizzle the melted butter over the top of the casserole. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
  6. Uncover and Continue Baking: Remove the foil and bake for an additional 10-15 minutes, or until the top is golden brown and the casserole is bubbly.
  7. Serve: Let the Reuben bake cool for a few minutes before slicing and serving. Enjoy!
