Ingredients
- 1 head of fresh lettuce (Romaine or Iceberg), chopped
- 3 hard-boiled eggs, sliced or chopped
- 1 small cucumber, thinly sliced
- 1 small red onion, thinly sliced (optional)
- 1 small tomato, diced (optional)
- 2 tbsp mayonnaise or Greek yogurt
- 1 tsp Dijon mustard (optional)
- 1 tbsp lemon juice or vinegar
- Salt and black pepper to taste
- Fresh dill or parsley for garnish (optional)
Instructions
- Prepare the veggies: Wash and chop the lettuce. Thinly slice the cucumber and red onion. Dice the tomato if using.
- Boil the eggs: Boil eggs for about 10 minutes. Cool, peel, and slice or chop them.
- Make the dressing: In a small bowl, mix mayonnaise (or Greek yogurt), Dijon mustard, lemon juice, salt, and pepper until creamy.
- Assemble the salad: In a large bowl, combine the lettuce, cucumber, onion, tomato, and eggs.
- Toss with dressing: Gently mix in the dressing until all ingredients are coated.
- Garnish: Sprinkle chopped dill or parsley on top if desired.
- Serve immediately or chill for 15–20 minutes for an even cooler bite!
