Ravioli with Tomatoes, Asparagus, Garlic, and Herbs

Ingredients

  • 1 (20 oz) package cheese ravioli (or your favorite kind)
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 pint cherry or grape tomatoes, halved
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • Salt and black pepper, to taste
  • 1 teaspoon Italian seasoning or mixed dried herbs
  • 2 tablespoons fresh basil, chopped (or 1 tsp dried)
  • 2 tablespoons grated Parmesan cheese (optional)
  • Red pepper flakes (optional, for a kick)

Instructions

  1. Cook ravioli according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for about 30 seconds until fragrant.
  3. Add the tomatoes and cook for 3–4 minutes until they start to soften.
  4. Stir in the asparagus and season with salt, pepper, and Italian seasoning. Cook for another 5–6 minutes, or until asparagus is tender-crisp.
  5. Add the cooked ravioli to the skillet and toss gently to combine everything.
  6. Sprinkle with fresh basil and Parmesan cheese before serving. Add red pepper flakes if desired.
  7. Serve warm and enjoy!
