Raspberry Stick Coconut Cut Bars — a no-bake treat that’s fruity, chewy, and coconutty

Ingredients

  • 1½ cups desiccated coconut
  • 1 cup crushed graham crackers or digestive biscuits
  • ½ cup sweetened condensed milk
  • ½ cup raspberry jam (preferably seedless)
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional: 2 tbsp chopped nuts (almonds or pistachios)
  • Extra shredded coconut for dusting

Instructions

  1. In a large mixing bowl, combine desiccated coconut, crushed graham crackers, and a pinch of salt.
  2. Add the sweetened condensed milk and vanilla extract. Mix until everything is well coated and forms a sticky dough.
  3. Divide the mixture in half.
  4. Press one half of the mixture into a parchment-lined loaf pan or square dish, flattening it evenly with the back of a spoon.
  5. Spread the raspberry jam gently over the first layer.
  6. Top with the remaining coconut mixture and press it down evenly.
  7. Dust the top with extra shredded coconut and gently press to adhere.
  8. Chill in the fridge for at least 2 hours or until firm.
  9. Slice into sticks or bars and enjoy!
