Ingredients
- 1½ cups desiccated coconut
- 1 cup crushed graham crackers or digestive biscuits
- ½ cup sweetened condensed milk
- ½ cup raspberry jam (preferably seedless)
- 1 tsp vanilla extract
- Pinch of salt
- Optional: 2 tbsp chopped nuts (almonds or pistachios)
- Extra shredded coconut for dusting
Instructions
- In a large mixing bowl, combine desiccated coconut, crushed graham crackers, and a pinch of salt.
- Add the sweetened condensed milk and vanilla extract. Mix until everything is well coated and forms a sticky dough.
- Divide the mixture in half.
- Press one half of the mixture into a parchment-lined loaf pan or square dish, flattening it evenly with the back of a spoon.
- Spread the raspberry jam gently over the first layer.
- Top with the remaining coconut mixture and press it down evenly.
- Dust the top with extra shredded coconut and gently press to adhere.
- Chill in the fridge for at least 2 hours or until firm.
- Slice into sticks or bars and enjoy!
