- ½ medium cabbage, thinly sliced
- 3 large eggs
- 2 tablespoons vegetable oil (or any cooking oil)
- 2 cloves garlic, minced
- 2 green onions, chopped (optional)
- 1 tablespoon soy sauce
- ½ teaspoon sesame oil (optional)
- Salt and pepper, to taste
Instructions
- Prep: Thinly slice the cabbage and chop the green onions. Crack the eggs into a bowl, beat them lightly, and season with a pinch of salt.
- Cook eggs: Heat 1 tablespoon of oil in a large skillet or wok over medium heat. Pour in the beaten eggs and scramble gently until just cooked through. Transfer to a plate and set aside.
- Stir-fry cabbage: In the same pan, add the remaining 1 tablespoon of oil. Add minced garlic and sauté for about 30 seconds until fragrant. Add the sliced cabbage and stir-fry for 3–5 minutes until it softens but still has a bit of crunch.
- Combine: Return the cooked eggs to the pan. Pour in the soy sauce and sesame oil (if using). Stir well to combine everything evenly. Season with salt and pepper to taste.
- Finish: Garnish with chopped green onions if desired. Serve hot as a light meal or side dish.
