Quick & Delicious Cabbage and Egg Stir-Fry

Ingredients

  • ½ medium cabbage, thinly sliced
  • 3 large eggs
  • 2 tablespoons vegetable oil (or any cooking oil)
  • 2 cloves garlic, minced
  • 2 green onions, chopped (optional)
  • 1 tablespoon soy sauce
  • ½ teaspoon sesame oil (optional)
  • Salt and pepper, to taste

Instructions

  1. Prep: Thinly slice the cabbage and chop the green onions. Crack the eggs into a bowl, beat them lightly, and season with a pinch of salt.
  2. Cook eggs: Heat 1 tablespoon of oil in a large skillet or wok over medium heat. Pour in the beaten eggs and scramble gently until just cooked through. Transfer to a plate and set aside.
  3. Stir-fry cabbage: In the same pan, add the remaining 1 tablespoon of oil. Add minced garlic and sauté for about 30 seconds until fragrant. Add the sliced cabbage and stir-fry for 3–5 minutes until it softens but still has a bit of crunch.
  4. Combine: Return the cooked eggs to the pan. Pour in the soy sauce and sesame oil (if using). Stir well to combine everything evenly. Season with salt and pepper to taste.
  5. Finish: Garnish with chopped green onions if desired. Serve hot as a light meal or side dish.
