Ingredients:
- 1.5 lbs baby potatoes, scrubbed and halved
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup butter, melted
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup milk
Instructions:
- Preheat oven: Preheat your oven to 400°F (200°C).
- Boil potatoes: Boil the potatoes in a large pot of salted water until tender but not mushy. Drain well.
- Make the sauce: In a medium saucepan, melt the butter over medium heat. Whisk in the flour, salt, and pepper until smooth. Gradually whisk in the milk, stirring constantly until the sauce thickens. Remove from heat and stir in the sour cream.
- Assemble: In a greased 9×13 inch baking dish, layer the potatoes and cheese. Pour the sauce over the potatoes and cheese.
- Bake: Bake in the preheated oven for 20-25 minutes, or until the potatoes are bubbly and the cheese is melted.
