Queijadinhas – Um docinho típico

Ingredients

  • 1 can (395g) sweetened condensed milk
  • 1 cup shredded coconut (unsweetened or sweetened)
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons butter (softened)
  • 2 eggs
  • 1 tablespoon all-purpose flour
  • 1 teaspoon baking powder

Instructions

  1. Preheat your oven to 180°C (350°F). Grease a muffin tin or small molds with butter and lightly flour them.
  2. In a bowl, mix the sweetened condensed milk, coconut, Parmesan cheese, and butter until well combined.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the flour and baking powder until the batter is smooth.
  5. Spoon the batter into the prepared molds, filling them about ¾ full.
  6. Bake for 20–25 minutes, or until the tops are golden and a toothpick inserted in the center comes out clean.
  7. Let them cool slightly before unmolding.
  8. Serve warm or at room temperature. Enjoy!
