- 1 can (395g) sweetened condensed milk
- 1 cup shredded coconut (unsweetened or sweetened)
- 2 tablespoons grated Parmesan cheese
- 2 tablespoons butter (softened)
- 2 eggs
- 1 tablespoon all-purpose flour
- 1 teaspoon baking powder
Instructions
- Preheat your oven to 180°C (350°F). Grease a muffin tin or small molds with butter and lightly flour them.
- In a bowl, mix the sweetened condensed milk, coconut, Parmesan cheese, and butter until well combined.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the flour and baking powder until the batter is smooth.
- Spoon the batter into the prepared molds, filling them about ¾ full.
- Bake for 20–25 minutes, or until the tops are golden and a toothpick inserted in the center comes out clean.
- Let them cool slightly before unmolding.
