Quark Pancakes, also known as “Quark Pfannkuchen” in German


Ingredients

  • 250g quark (or substitute with Greek yogurt if needed)
  • 2 eggs
  • 2 tbsp sugar
  • 1 tsp vanilla extract
  • 100 ml milk
  • 100g all-purpose flour
  • 1 tsp baking powder
  • Pinch of salt
  • Butter or oil for frying
  • Optional: powdered sugar, fresh fruit, or jam for serving

Instructions

  1. In a mixing bowl, whisk together the quark, eggs, sugar, and vanilla extract until smooth.
  2. Add the milk and mix well.
  3. In a separate bowl, combine the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the quark mixture and stir until you have a smooth batter. If the batter is too thick, add a splash more milk.
  5. Heat a non-stick skillet over medium heat and add a little butter or oil.
  6. Pour small portions of batter into the pan and cook for about 2–3 minutes on each side, until golden brown and cooked through.
  7. Serve warm, dusted with powdered sugar, fresh fruit, or your favorite jam.
