- 1 cup mashed ripe bananas (about 2 large)
- ¾ cup canned pumpkin puree
- 2 large eggs
- ½ cup vegetable oil (or melted butter)
- ¾ cup brown sugar
- ¼ cup granulated sugar
- 1 tsp vanilla extract
- 1 ¾ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 ½ tsp ground cinnamon
- ½ tsp ground nutmeg
- ¼ tsp ground ginger
- ¼ tsp ground cloves (optional)
- ½ cup chopped walnuts or pecans (optional)
- ½ cup chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.
- In a large bowl, whisk together mashed bananas, pumpkin puree, eggs, oil, sugars, and vanilla until well combined.
- In a separate bowl, mix the flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves.
- Gradually add dry ingredients to the wet mixture. Stir just until combined—don’t overmix.
- Fold in nuts or chocolate chips, if using.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
