Pumpkin Banana Bread recipe

Ingredients

  • 1 cup mashed ripe bananas (about 2 large)
  • ¾ cup canned pumpkin puree
  • 2 large eggs
  • ½ cup vegetable oil (or melted butter)
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 ¾ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground ginger
  • ¼ tsp ground cloves (optional)
  • ½ cup chopped walnuts or pecans (optional)
  • ½ cup chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.
  2. In a large bowl, whisk together mashed bananas, pumpkin puree, eggs, oil, sugars, and vanilla until well combined.
  3. In a separate bowl, mix the flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves.
  4. Gradually add dry ingredients to the wet mixture. Stir just until combined—don’t overmix.
  5. Fold in nuts or chocolate chips, if using.
  6. Pour batter into the prepared loaf pan and smooth the top.
  7. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
