Ingredients

  • 2 medium cooked beets (peeled and chopped)
  • 2 cups whole milk
  • 2–3 tablespoons honey (or sugar, to taste)

Instructions

  1. Bring the milk to a gentle boil in a saucepan over medium heat.
  2. Add the chopped beets to the boiling milk. Reduce heat to low and simmer for about 5–10 minutes, stirring occasionally.
  3. Remove from heat and blend the mixture with a hand blender or in a countertop blender until smooth and creamy.
  4. Sweeten with honey or sugar to taste. Stir well.
  5. Pour into mugs or bowls and enjoy warm, or chill and serve cold for a refreshing drink!
