- 4 medium potatoes, peeled and diced
- 1 small onion, finely chopped
- 1 bell pepper (any color), diced
- 4 large eggs
- 2 tbsp olive oil or butter
- Salt, to taste
- Black pepper, to taste
- ½ tsp paprika (optional)
- Fresh parsley or green onions, for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the diced potatoes and cook, stirring occasionally, for 8–10 minutes until golden and nearly tender.
- Add the chopped onion and bell pepper to the skillet. Continue to cook until softened, about 5 minutes.
- Season with salt, pepper, and paprika (if using).
- Create 4 small wells in the mixture and crack one egg into each well.
- Cover the skillet and cook for 5–7 minutes, or until the eggs are cooked to your liking.
- Garnish with fresh parsley or green onions and serve hot with toast or flatbread.
