Potatoes with Eggs


INGREDENt

  • 4 medium potatoes, peeled and diced
  • 1 small onion, finely chopped
  • 1 bell pepper (any color), diced
  • 4 large eggs
  • 2 tbsp olive oil or butter
  • Salt, to taste
  • Black pepper, to taste
  • ½ tsp paprika (optional)
  • Fresh parsley or green onions, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced potatoes and cook, stirring occasionally, for 8–10 minutes until golden and nearly tender.
  3. Add the chopped onion and bell pepper to the skillet. Continue to cook until softened, about 5 minutes.
  4. Season with salt, pepper, and paprika (if using).
  5. Create 4 small wells in the mixture and crack one egg into each well.
  6. Cover the skillet and cook for 5–7 minutes, or until the eggs are cooked to your liking.
  7. Garnish with fresh parsley or green onions and serve hot with toast or flatbread.
