Potato Rolls with Chicken

Ingredients

  • 2 large potatoes, boiled and mashed
  • 1 cup cooked chicken, shredded
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup green onions, chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1/2 cup flour
  • Oil for frying

Instructions

  1. In a bowl, mix mashed potatoes, shredded chicken, cheese, green onions, garlic powder, salt, pepper, and paprika.
  2. Take a small portion of the mixture and roll it into a log or oval shape. Repeat for the remaining mixture.
  3. Set up a breading station with three bowls: one with flour, one with a beaten egg, and one with breadcrumbs.
  4. Dip each potato roll into the flour, then the egg, and finally coat with breadcrumbs.
  5. Heat oil in a pan over medium heat and fry the rolls until golden brown and crispy.
  6. Remove and drain on paper towels.
  7. Serve warm with your favorite dipping sauce.
