- 2 large potatoes, boiled and mashed
- 1 cup cooked chicken, shredded
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup green onions, chopped
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 egg
- 1/2 cup breadcrumbs
- 1/2 cup flour
- Oil for frying
Instructions
- In a bowl, mix mashed potatoes, shredded chicken, cheese, green onions, garlic powder, salt, pepper, and paprika.
- Take a small portion of the mixture and roll it into a log or oval shape. Repeat for the remaining mixture.
- Set up a breading station with three bowls: one with flour, one with a beaten egg, and one with breadcrumbs.
- Dip each potato roll into the flour, then the egg, and finally coat with breadcrumbs.
- Heat oil in a pan over medium heat and fry the rolls until golden brown and crispy.
- Remove and drain on paper towels.
- Serve warm with your favorite dipping sauce.
