- 500 g minced meat (beef or mixed)
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 yellow pepper, diced
- 3 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Fresh parsley, chopped (to taste)
- 4 large potatoes (for the roll base)
- 2 eggs
- 100 g grated cheese (mozzarella or cheddar)
- Salt and black pepper to taste
- 2 tablespoons olive oil
Instructions
- Prepare the potato mixture
- Peel and grate the potatoes, then squeeze out excess water with a clean towel.
- Mix the grated potatoes with eggs, cheese, salt, and black pepper. Set aside.
- Cook the filling
- Heat olive oil in a pan, add onion and garlic, and sauté until golden.
- Add minced meat and cook until browned.
- Stir in yellow pepper, tomato paste, thyme, paprika, salt, and pepper. Cook for 5–7 minutes.
- Add fresh parsley and let the filling cool slightly.
- Assemble the roll
- Spread the potato mixture evenly on a parchment-lined baking tray, pressing it flat into a rectangle.
- Bake at 180°C (350°F) for about 20 minutes until firm and lightly golden.
- Remove from the oven, spread the meat filling on top, and gently roll it up using the parchment paper.
- Final bake
- Return the roll to the oven and bake for another 15 minutes to set.
- Slice and serve warm, garnished with parsley or extra cheese if desired.
