Potato Pastry Recipe

These savory potato pastries are light, fluffy, and perfectly golden. Filled with mashed potatoes and encased in a delicate, flaky pastry, they’re a delicious snack or side dish that pairs well with soups, salads, or even as a quick bite on their own.

Ingredients

  • 2 large potatoes (peeled and cubed)
  • 1 sheet puff pastry (store-bought or homemade)
  • 1/2 cup grated cheese (cheddar, mozzarella, or your choice)
  • 2 tbsp butter
  • 1/4 cup heavy cream
  • Salt and pepper to taste
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 egg (for egg wash)
  • Fresh herbs (parsley or chives for garnish)

Instructions

  1. Prepare the Mashed Potatoes:
Boil the peeled and cubed potatoes in salted water until tender, about 15 minutes. Drain the water and mash the potatoes with butter, cream, cheese, garlic powder, onion powder, salt, and pepper until smooth. Set aside to cool.
  2. Prepare the Pastry:
Preheat the oven to 375°F (190°C). Roll out the puff pastry sheet on a lightly floured surface. Cut it into squares or rectangles, depending on your preferred pastry size.
  3. Fill the Pastries:
Spoon about 1-2 tablespoons of the mashed potato mixture into the center of each pastry square. Fold the pastry over the filling (diagonally for triangles or in half for rectangles) and seal the edges by pressing them with a fork.
  4. Egg Wash:
Beat the egg in a small bowl and brush the tops of the pastries with the egg wash for a golden finish.
  5. Bake:
Place the pastries on a baking sheet lined with parchment paper and bake for 20-25 minutes or until they turn golden brown and puffed.
  6. Serve:
Garnish with fresh herbs and serve warm!

Enjoy your crispy, cheesy, and comforting potato pastries!
