Potato Pancakes recipe


Ingredients

  • 4 medium potatoes, peeled and grated
  • 1 small onion, grated
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1 tsp salt
  • 1/4 tsp black pepper
  • Vegetable oil (for frying)

Instructions

  1. Place grated potatoes and onion in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible.
  2. Transfer to a mixing bowl. Add eggs, flour, salt, and pepper. Stir until well combined.
  3. Heat a generous layer of oil in a skillet over medium heat.
  4. Scoop about 2 tablespoons of the mixture per pancake into the pan and flatten slightly with a spatula.
  5. Cook 3–4 minutes on each side or until golden brown and crispy.
  6. Remove and drain on paper towels.
  7. Serve hot with sour cream or applesauce.
