Ingredients
- 4 medium potatoes, peeled and grated
- 1 small onion, grated
- 2 large eggs
- 1/4 cup all-purpose flour
- 1 tsp salt
- 1/4 tsp black pepper
- Vegetable oil (for frying)
Instructions
- Place grated potatoes and onion in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible.
- Transfer to a mixing bowl. Add eggs, flour, salt, and pepper. Stir until well combined.
- Heat a generous layer of oil in a skillet over medium heat.
- Scoop about 2 tablespoons of the mixture per pancake into the pan and flatten slightly with a spatula.
- Cook 3–4 minutes on each side or until golden brown and crispy.
- Remove and drain on paper towels.
- Serve hot with sour cream or applesauce.
