- 4 medium potatoes, peeled
- 1 small onion
- 2 large eggs
- 1/4 cup all-purpose flour
- 1 tsp salt
- 1/4 tsp black pepper
- Oil, for frying (vegetable or canola works well)

- Grate the potatoes and onion using a box grater or food processor.
- Place the mixture in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible.
- Transfer the grated mix to a large bowl.
- Add eggs, flour, salt, and pepper. Mix until well combined.
- Heat a few tablespoons of oil in a frying pan over medium heat.
- Scoop 2-3 tablespoons of the mixture per pancake into the pan and flatten gently with a spatula.
- Fry for 3–4 minutes per side, or until golden brown and crispy.
- Transfer to a paper towel-lined plate to drain excess oil.
- Serve hot with sour cream or applesauce.
