  • 4 medium potatoes, peeled
  • 1 small onion
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1 tsp salt
  • 1/4 tsp black pepper
  • Oil, for frying (vegetable or canola works well)

  1. Grate the potatoes and onion using a box grater or food processor.
  2. Place the mixture in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible.
  3. Transfer the grated mix to a large bowl.
  4. Add eggs, flour, salt, and pepper. Mix until well combined.
  5. Heat a few tablespoons of oil in a frying pan over medium heat.
  6. Scoop 2-3 tablespoons of the mixture per pancake into the pan and flatten gently with a spatula.
  7. Fry for 3–4 minutes per side, or until golden brown and crispy.
  8. Transfer to a paper towel-lined plate to drain excess oil.
  9. Serve hot with sour cream or applesauce.
