Potato Green Chilli Taco

Ingredients

  • 2 large potatoes (peeled and diced)
  • 2 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 1 small onion, finely chopped
  • 2-3 green chilies (finely chopped)
  • 2 garlic cloves (minced)
  • 1/2 tsp turmeric powder
  • 1/2 tsp paprika (optional, for color)
  • Salt to taste
  • Fresh cilantro leaves, chopped
  • 8 small soft taco tortillas
  • 1/4 cup shredded cheese (optional, for topping)
  • Lime wedges (for garnish)

Instructions

  1. Cook the Potatoes: Heat oil in a pan over medium heat. Add the diced potatoes and fry until they are crispy and golden, about 10-12 minutes. Remove and set them aside.
  2. Make the Flavored Base: In the same pan, add cumin seeds. Once they splutter, add the chopped onions, garlic, and green chilies. Sauté for 2-3 minutes until soft and fragrant.
  3. Season the Potatoes: Add the turmeric powder, paprika, and salt. Stir well. Then add the fried potatoes back to the pan and toss them to coat evenly with the spices. Cook for 5 more minutes, allowing the flavors to combine.
  4. Assemble the Tacos: Warm the tortillas in a skillet or microwave. Place a few spoonfuls of the potato mixture onto each tortilla.
  5. Garnish & Serve: Top with fresh cilantro and a squeeze of lime juice. Add shredded cheese if desired for extra flavor. Serve immediately!
