Ingredients:
- 4 medium-sized potatoes (peeled and grated)
- 1 small onion (grated or finely chopped)
- 2 eggs
- 1/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika (optional)
- Oil for frying
Instructions:
- Grate the potatoes and squeeze out excess water using a clean kitchen towel.
- In a large bowl, mix the grated potatoes, onion, eggs, flour, baking powder, salt, pepper, and paprika until well combined.
- Heat oil in a frying pan over medium heat.
- Scoop small portions of the potato mixture and flatten them slightly to form fritters.
- Fry the fritters in batches, about 3–4 minutes per side, until golden brown and crispy.
- Remove the fritters from the pan and place them on paper towels to drain excess oil.
