Potato Fritters

INGREDIENTS

  • 3 medium potatoes, peeled and grated
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 eggs
  • ¼ cup all-purpose flour (or chickpea flour for a gluten-free version)
  • ¼ cup chopped parsley or cilantro (optional)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon paprika (optional)
  • Vegetable oil for frying

INSTRUCTIONS

  1. Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out as much excess moisture as possible.
  2. In a large bowl, combine the grated potatoes, chopped onion, garlic, eggs, flour, herbs (if using), salt, pepper, and paprika. Mix until well combined.
  3. Heat a few tablespoons of oil in a skillet over medium heat.
  4. Drop spoonfuls of the potato mixture into the pan and flatten them slightly with the back of the spoon.
  5. Cook for 3–4 minutes on each side, or until golden brown and crispy.
  6. Transfer the fritters to a paper towel-lined plate to drain excess oil.
  7. Serve hot with sour cream, yogurt dip, or ketchup.
