INGREDIENTS
- 3 medium potatoes, peeled and grated
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 eggs
- ¼ cup all-purpose flour (or chickpea flour for a gluten-free version)
- ¼ cup chopped parsley or cilantro (optional)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon paprika (optional)
- Vegetable oil for frying
INSTRUCTIONS
- Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out as much excess moisture as possible.
- In a large bowl, combine the grated potatoes, chopped onion, garlic, eggs, flour, herbs (if using), salt, pepper, and paprika. Mix until well combined.
- Heat a few tablespoons of oil in a skillet over medium heat.
- Drop spoonfuls of the potato mixture into the pan and flatten them slightly with the back of the spoon.
- Cook for 3–4 minutes on each side, or until golden brown and crispy.
- Transfer the fritters to a paper towel-lined plate to drain excess oil.
- Serve hot with sour cream, yogurt dip, or ketchup.
