Potato & Egg Frittata Recipe

A frittata is an Italian dish similar to an omelet, but baked in the oven. This version is packed with potatoes and vegetables, making it a hearty and satisfying meal.  

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 pound potatoes, peeled and diced
  • Salt and pepper to taste
  • 8 large eggs
  • 1/2 cup milk
  • 1/4 cup grated Parmesan cheese  
  • Fresh herbs (such as parsley, chives, or oregano) for garnish  

Instructions:

  1. Prep the Vegetables:
    • Heat the olive oil in a large skillet over medium heat.
    • Add the onion and bell pepper and cook until softened, about 5 minutes.
    • Add the diced potatoes and cook until tender, about 10 minutes. Season with salt and pepper.  
  2. Whisk the Egg Mixture:
    • In a large bowl, whisk together the eggs, milk, and Parmesan cheese. Season with salt and pepper.
  3. Combine and Bake:
    • Pour the egg mixture over the potatoes and vegetables in the skillet.
    • Sprinkle with any desired herbs.
    • Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until the frittata is set and lightly golden brown on top.
  4. Serve:
    • Let the frittata cool slightly before cutting into wedges.
    • Serve warm or at room temperature.

Tips & Variations:

  • Add-ins: Feel free to get creative with your add-ins! Some delicious options include spinach, mushrooms, ham, bacon, or crumbled feta cheese.
  • Spice it Up: Add a pinch of red pepper flakes or a sprinkle of smoked paprika for extra flavor.
  • Make it Ahead: You can make the frittata ahead of time and reheat it gently in the oven or on the stovetop.
