A delicious and satisfying roll filled with seasoned ground beef and fluffy mashed potatoes. Perfect for a hearty snack or light meal.

Ingredients:

For the Beef Filling:

  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

For the Potato Layer:

  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup milk
  • 1/4 cup butter
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Prepare the Beef Filling:
    • Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes.
    • Add ground beef and cook, breaking it up with a spoon, until browned. Drain any excess grease.
    • Stir in garlic, cumin, chili powder, salt, and pepper. Cook for 1 minute more. Set aside.
  2. Prepare the Potato Layer:
    • Boil potatoes until tender, about 15-20 minutes. Drain and return to the pot.
    • Mash potatoes with milk, butter, salt, and pepper until smooth and creamy.
  3. Assemble the Rolls:
    • Preheat oven to 375°F (190°C).
    • Spread mashed potatoes evenly on a large sheet of parchment paper, forming a rectangle about 12×16 inches.
    • Spread the beef filling evenly over the potato layer, leaving a 1-inch border around the edges.
    • Starting from one short end, carefully roll up the potato and beef mixture like a jelly roll, using the parchment paper to help.
    • Place the roll seam-down on a baking sheet.
  4. Bake:
    • Bake for 20-25 minutes, or until heated through and lightly golden.
  5. Slice and Serve:
    • Let the roll cool slightly before slicing into individual servings.
