A comforting and flavorful side dish made with tender potatoes and caramelized onions. This recipe is easy to prepare and pairs well with any main course.
Ingredients
- 4 medium-sized potatoes (Yukon Gold or Russet), peeled and sliced thin
- 2 large onions, thinly sliced
- 3 tablespoons olive oil (or butter for richer flavor)
- 2 cloves garlic, minced (optional)
- Salt and pepper, to taste
- 1 teaspoon dried thyme or rosemary (optional)
- 1 tablespoon fresh parsley, chopped (for garnish)
- ½ cup grated Parmesan cheese (optional)
Instructions
- Prepare the Ingredients:
- Peel and thinly slice the potatoes. Set aside in a bowl of water to prevent browning.
- Thinly slice the onions and mince the garlic (if using).
- Heat the Pan:
- Heat the olive oil (or butter) in a large skillet over medium heat.
- Cook the Onions:
- Add the onions to the pan and cook, stirring occasionally, for about 10-12 minutes until they become soft and golden brown. Add the garlic during the last 2 minutes, if using. Season with a pinch of salt and pepper.
- Cook the Potatoes:
- Drain and pat the potato slices dry. Add them to the pan with the onions. Toss everything together, ensuring the potatoes are evenly coated with oil.
- Cook for about 20-25 minutes, stirring occasionally, until the potatoes are tender and slightly crispy around the edges. Add thyme or rosemary if desired.
- Finish and Serve:
- Once the potatoes are fully cooked, adjust seasoning with salt and pepper to taste.
- Garnish with fresh parsley and a sprinkle of Parmesan cheese if you like.
