Pot of Chili at Home Recipe

Ingredients:

  • 1 lb ground beef (or ground turkey)
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 2 cups beef broth (or water)
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper (optional for extra heat)
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions:

  1. In a large pot, heat 1 tbsp olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes.
  2. Add the minced garlic and diced bell pepper, and cook for another 3-4 minutes until fragrant.
  3. Push the vegetables to the side of the pot and add the ground beef (or turkey). Cook until browned, breaking it apart as it cooks, about 7-8 minutes. Drain excess fat if necessary.
  4. Stir in the chili powder, cumin, smoked paprika, cayenne (if using), salt, and pepper. Cook for 1-2 minutes to let the spices bloom.
  5. Add the diced tomatoes, tomato paste, beans, and beef broth. Stir everything together and bring to a simmer.
  6. Reduce the heat to low and cover the pot. Let the chili simmer for at least 30 minutes, stirring occasionally.
  7. Taste and adjust seasoning if needed.
