Ingredients
- 500g (1 lb) pork (chops or strips)
- 4–5 medium potatoes, thinly sliced
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 cup heavy cream (or milk + 2 tbsp cream)
- 2 tbsp butter or olive oil
- 1 tsp dried thyme (or rosemary)
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish with butter or oil.
- In a skillet, heat oil and sear the pork pieces until lightly browned (they don’t need to be fully cooked). Season with salt and pepper.
- Layer half of the potato slices in the baking dish, then top with half the onions and garlic.
- Place the seared pork pieces over the potato layer.
- Add the remaining potatoes and onions on top.
- In a bowl, mix cream, thyme, salt, and pepper. Pour evenly over the potatoes and pork.
- Cover the dish with foil and bake for 40 minutes.
- Remove foil, sprinkle with cheese, and bake uncovered for another 15–20 minutes until golden and bubbly.
- Garnish with fresh parsley and serve hot.
Would you like me to make this a creamy version with a sauce (like scalloped potatoes) or more of a crispy potato bake style?
