Ingredients

  • For the Pork Chops:
  • 4 bone-in pork chops
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • For the Scalloped Potatoes:
  • 4 large russet potatoes, peeled and thinly sliced
  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste

Instructions

  1. Prepare the Pork Chops:
  • Preheat your oven to 375°F (190°C).
  • Rub the pork chops with olive oil, salt, pepper, garlic powder, onion powder, and dried thyme.
  • Heat a large skillet over medium-high heat and sear the pork chops for 3-4 minutes per side, until golden brown. Transfer them to a plate and set aside.
  1. Prepare the Scalloped Potatoes:
  • In the same skillet, melt the butter over medium heat. Add the chopped onion and cook until softened, about 3 minutes. Add the minced garlic and cook for another 30 seconds.
  • Stir in the heavy cream, milk, and dried thyme. Bring the mixture to a simmer.
  • Add the shredded cheddar cheese and Parmesan cheese, stirring until melted and smooth. Season with salt and pepper to taste.
  • Arrange the sliced potatoes in a greased baking dish, slightly overlapping each slice.
  • Pour the cheese sauce evenly over the potatoes, ensuring all slices are covered.
  1. Assemble and Bake:
  • Place the seared pork chops on top of the scalloped potatoes.
  • Cover the baking dish with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15-20 minutes, until the potatoes are tender and the pork chops reach an internal temperature of 145°F (63°C).
  • Let the dish rest for 5 minutes before serving.
