- 1 lb pork shoulder or pork belly, cut into chunks
- 2 tbsp vegetable oil
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp brown sugar
- 1 tsp ground black pepper
- 1 tsp chili flakes (optional for heat)
- 1/2 cup water or broth
- Salt to taste
- Fresh cilantro or green onions for garnish
Instructions
- Heat vegetable oil in a large pot over medium-high heat. Add the pork chunks and brown on all sides. Remove the pork from the pot and set aside.
- In the same pot, add chopped onions, garlic, and grated ginger. Sauté until the onions are soft and translucent, about 3-4 minutes.
- Stir in the soy sauce, rice vinegar, brown sugar, ground black pepper, and chili flakes (if using). Cook for another 2 minutes to combine the flavors.
- Return the pork to the pot, adding water or broth. Stir everything together, ensuring the pork is covered with liquid. Bring to a simmer.
- Cover the pot and let the pork cook for 1-1.5 hours on low heat, or until the pork is tender and the sauce has thickened.
- Taste and adjust seasoning with salt, if necessary.
- Garnish with fresh cilantro or chopped green onions before serving.
