Poor Man Husband Casserole

INGREDENT

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes (undrained)
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 8 oz egg noodles, cooked and drained
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 2 cups shredded cheddar cheese (or mozzarella)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef, onion, and garlic until meat is browned. Drain excess grease.
  3. Stir in tomato sauce, diced tomatoes, Italian seasoning, salt, and pepper. Simmer for 5–7 minutes.
  4. In a medium bowl, mix the cooked egg noodles with sour cream and cottage cheese until well coated.
  5. In a greased 9×13-inch baking dish, layer half the noodle mixture, then half the meat mixture, and sprinkle with 1 cup shredded cheese.
  6. Repeat layers, ending with remaining shredded cheese on top.
  7. Bake uncovered for 25–30 minutes, or until cheese is melted and bubbly.
  8. Let rest for 5 minutes before serving.
