Pistachio Puppy Chow

INGREDENT

  • 6 cups Rice Chex cereal
  • 1 cup white chocolate chips
  • 1/2 cup pistachio butter (or creamy peanut butter if unavailable)
  • 1/4 cup unsalted butter
  • 1 tsp vanilla extract
  • 1 1/2 cups powdered sugar
  • 1/2 cup finely chopped pistachios (optional, for extra crunch)
  • A pinch of salt
  • Green food coloring (optional, for fun pistachio look)

Instructions

  1. Prepare the cereal:
    Place the Rice Chex cereal in a large mixing bowl and set aside.
  2. Melt the mix:
    In a medium microwave-safe bowl, combine white chocolate chips, pistachio butter, and butter. Microwave in 30-second intervals, stirring in between, until melted and smooth.
  3. Flavor boost:
    Stir in vanilla extract and a pinch of salt. Add green food coloring if desired for a pistachio hue.
  4. Coat the cereal:
    Pour the melted mixture over the cereal. Gently fold with a spatula until all pieces are evenly coated.
  5. Add sugar:
    Transfer coated cereal to a large ziplock bag. Add powdered sugar, seal, and shake until fully coated.
  6. Add pistachios:
    If using chopped pistachios, mix them in now for added crunch.
  7. Cool & Serve:
    Spread the mix on a baking sheet to cool and dry. Store in an airtight container for up to a week.
