Pineapple Upside Down Cake Recipe

This classic dessert features a caramelized layer of pineapple rings and cherries on the bottom, topped with a moist and buttery cake.

Ingredients:

  • For the Topping:
    • 1 (20 ounce) can sliced pineapple rings in juice, drained
    • 1/2 cup packed brown sugar
    • 1/4 cup butter, melted
    • Maraschino cherries, drained (optional)
  • For the Cake:
    • 1 1/2 cups all-purpose flour
    • 1 1/2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1/2 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 1/2 cup milk  

Instructions:

  1. Prepare the Topping:
    • Preheat oven to 350°F (175°C).
    • In a 9-inch cast iron skillet or oven-safe skillet, arrange the pineapple rings in a single layer.
    • Sprinkle evenly with brown sugar.
    • Dot with melted butter.
    • If using, place a maraschino cherry in the center of each pineapple ring.
  2. Make the Cake Batter:
    • In a medium bowl, whisk together flour, baking powder, and salt.
    • In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
    • Beat in eggs one at a time, then stir in vanilla extract.
    • Gradually add the dry ingredients to the wet ingredients, alternating with milk, beginning and ending with dry ingredients. Mix until just combined.  
  3. Bake the Cake:
    • Pour the batter evenly over the pineapple topping in the skillet.
    • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  4. Invert and Serve:
    • Let the cake cool in the skillet for 10 minutes.
    • Run a knife around the edges to loosen.
    • Place a large plate upside down over the skillet.
    • Carefully invert the skillet and plate together.
    • Gently lift off the skillet.
    • Serve warm or at room temperature.

  • For extra flavor, add a pinch of nutmeg or cinnamon to the cake batter.
  • You can use fresh pineapple rings instead of canned, but be sure to adjust the cooking time as needed.
  • To make a gluten-free version, substitute gluten-free flour for all-purpose flour.
