A sweet and savory centerpiece perfect for holidays or any special occasion. The pineapple glaze adds a tangy sweetness that complements the salty ham beautifully.
Ingredients:
- For the Ham:
- 1 (8-10 pound) pre-cooked, bone-in ham
- Whole cloves (optional)
- For the Glaze:
- 1 (20 ounce) can crushed pineapple, undrained
- 1 cup packed brown sugar
- 1/4 cup Dijon mustard
- 1/4 cup apple cider vinegar
- 1 tablespoon cornstarch
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground cinnamon
Instructions:
- Prepare the Ham:
- Preheat oven to 325°F (160°C).
- Remove the ham from its packaging and discard any liquid.
- If desired, score the ham’s surface in a diamond pattern. Insert whole cloves into the intersections of the score marks.
- Place the ham, cut side down, in a large roasting pan.
- Add about one cup of water to the bottom of the roasting pan.
- Cover the ham tightly with aluminum foil.
- Bake the Ham:
- Bake for approximately 15-20 minutes per pound, or until the ham reaches an internal temperature of 140°F (60°C).
- Remove the foil during the last 30 minutes of cooking.
- Prepare the Glaze:
- While the ham is baking, prepare the glaze.
- In a medium saucepan, combine the crushed pineapple (with its juice), brown sugar, Dijon mustard, apple cider vinegar, cornstarch, ginger, and cinnamon.
- Whisk the ingredients together until the cornstarch is dissolved.
- Bring the mixture to a simmer over medium heat, stirring constantly.
- Cook for 5-7 minutes, or until the glaze has thickened slightly.
- Glaze the Ham:
- Once the ham has reached 140°F, remove it from the oven.
- Brush a generous amount of the pineapple glaze over the entire surface of the ham.
- Return the ham to the oven, uncovered.
- Bake for an additional 15-20 minutes, or until the glaze is bubbly and caramelized.
- Brush the ham with remaining glaze every 5 minutes.
- Rest and Serve:
- Remove the ham from the oven and let it rest for 10-15 minutes before slicing.
- Slice the ham and serve warm.
Tips and Variations:
- For a spicier glaze, add a pinch of cayenne pepper to the glaze mixture.
- For a deeper pinapple flavor, you can add pineapple juice to the glaze.
- Serve with side dishes like scalloped potatoes, green bean casserole, or roasted vegetables.
- If you don’t have a bone in ham, a boneless ham will work as well, just adjust cooking times accordingly.
- If you don’t have apple cider vinegar, white vinegar is a good substitute.
