- 1 (8-10 lb) bone-in ham
- 1 cup pineapple juice
- 1/2 cup brown sugar (packed)
- 1/4 cup Dijon mustard
- 1/4 cup honey
- 1/4 cup apple cider vinegar
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp ground ginger
- 1/4 tsp ground allspice
- 1 tbsp cornstarch (optional, for thickening)
Instructions
- Preheat oven to 325°F (165°C).
- Prepare the ham: Score the surface of the ham in a diamond pattern, making shallow cuts about 1/2 inch deep. This will allow the glaze to soak in and add flavor.
- Make the glaze: In a medium saucepan, combine pineapple juice, brown sugar, Dijon mustard, honey, apple cider vinegar, cinnamon, cloves, ginger, and allspice. Bring to a boil over medium heat, then reduce to a simmer. Cook for 10-15 minutes, stirring occasionally, until the glaze has thickened slightly. If you prefer a thicker glaze, dissolve cornstarch in a little cold water and stir it into the sauce, simmering for another 1-2 minutes.
- Glaze the ham: Place the ham on a roasting rack in a roasting pan. Brush a generous amount of the glaze over the ham, making sure to get into the scored areas.
- Roast the ham: Roast the ham in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 140°F (60°C), basting with the glaze every 30 minutes.
- Finish and serve: Once the ham is done, remove it from the oven and let it rest for 10-15 minutes before slicing. Serve with any remaining glaze on the side.
