Pineapple Fluff Dessert Recipe

A light, creamy, and refreshing dessert perfect for potlucks, picnics, or a simple sweet treat.

Ingredients:

  • 1 (20 ounce) can crushed pineapple, undrained  
  • 1 (3.4 ounce) package instant vanilla pudding mix  
  • 1 (8 ounce) container frozen whipped topping, thawed  
  • 1 (10 ounce) package mini marshmallows
  • Optional: 1/2 cup chopped pecans or walnuts
  • Optional: 1/2 cup shredded coconut

Instructions:

  1. Combine Pineapple and Pudding: In a large bowl, combine the undrained crushed pineapple and the instant vanilla pudding mix. Stir well until the pudding mix is dissolved.
  2. Fold in Whipped Topping: Gently fold in the thawed whipped topping until well combined.
  3. Add Marshmallows: Add the mini marshmallows and fold them into the mixture.
  4. Add Optional Ingredients: If desired, add the chopped nuts and/or shredded coconut and fold them in.
  5. Chill: Cover the bowl and refrigerate for at least 1-2 hours, or until chilled and set.  
  6. Serve: Spoon the pineapple fluff into individual serving dishes and enjoy!

Variations:

  • Pistachio Fluff: Use pistachio instant pudding mix instead of vanilla.
  • Tropical Fluff: Add mandarin oranges or maraschino cherries for extra tropical flavor.
  • Strawberry Fluff: Use strawberry instant pudding mix and add sliced strawberries.
  • Jello Fluff: Add a small box of pineapple or lemon jello. Prepare the jello as per the box instructions, and let it set partially before adding to the recipe.  
  • Cream Cheese Fluff: combine 4 ounces of softened cream cheese with the pudding mix and pineapple for a richer flavor.  

Tips:

  • Ensure the whipped topping is fully thawed before folding it into the mixture for a smooth texture.
  • For a sweeter dessert, add a few tablespoons of powdered sugar.
  • For a more firm dessert, you can use a larger size pudding mix.
  • This dessert can be made a day ahead of time.
