Ingredients

Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted

Filling:

  • 1 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 (8 oz) package cream cheese, softened
  • 1 teaspoon vanilla extract

Topping:

  • 1 (20 oz) can crushed pineapple, drained
  • 1 (8 oz) container whipped topping (or homemade whipped cream)
  • Optional: toasted coconut flakes for garnish

Instructions

  1. Prepare the crust:
  • In a mixing bowl, combine the graham cracker crumbs and melted butter. Mix until evenly moistened.
  • Press the mixture firmly into the bottom of a 9×13-inch pan to form an even crust. Refrigerate for about 30 minutes or until set.

  • In a large bowl, beat the softened butter and powdered sugar until fluffy.
  • Add the cream cheese and vanilla extract and beat until smooth and creamy.

  • Cover and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the dessert to set.
