Ingredients

  • 1 (8 oz) package cream cheese, softened
  • 1 cup crushed pineapple, drained well
  • 2 cups powdered sugar
  • 2 ½ cups sweetened shredded coconut, divided
  • 1 tsp vanilla extract
  • ½ cup chopped pecans or walnuts (optional)
  • Red and green sprinkles (optional, for decoration)

Instructions

  1. In a large mixing bowl, beat the softened cream cheese until smooth.
  2. Add the drained crushed pineapple and vanilla extract. Mix well until combined.
  3. Gradually add the powdered sugar and 1 cup of the shredded coconut, mixing until fully incorporated.
  4. If using nuts, fold them into the mixture.
  5. Cover the bowl and refrigerate for 1-2 hours or until the mixture is firm enough to shape.
  6. Using a small cookie scoop or spoon, form the mixture into 1-inch balls.
  7. Roll each ball in the remaining shredded coconut or festive sprinkles.
