Instructions
- In a large mixing bowl, beat the softened cream cheese until smooth.
- Add the drained crushed pineapple and vanilla extract. Mix well until combined.
- Gradually add the powdered sugar and 1 cup of the shredded coconut, mixing until fully incorporated.
- If using nuts, fold them into the mixture.
- Cover the bowl and refrigerate for 1-2 hours or until the mixture is firm enough to shape.
- Using a small cookie scoop or spoon, form the mixture into 1-inch balls.
- Roll each ball in the remaining shredded coconut or festive sprinkles.
- Chill the finished balls in an airtight container for at least 1 hour before serving.
