Pineapple Coconut Dream Cake Recipe

A tropical delight that combines the sweetness of pineapple with the richness of coconut in a moist and delicious cake.

Ingredients:

For the Cake:

  • 1 box yellow cake mix (15.25 oz)
  • 1 cup crushed pineapple, drained
  • 1 cup shredded coconut
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 cup milk

For the Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons pineapple juice
  • 2 tablespoons unsalted butter, softened
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, combine the cake mix, crushed pineapple, shredded coconut, vegetable oil, eggs, and milk. Beat on medium speed for 2 minutes until well combined.
  3. Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.  
  4. Let the cake cool completely in the pan before frosting.  
  5. For the glaze, in a medium bowl, beat together the powdered sugar, pineapple juice, softened butter, and vanilla extract until smooth and creamy.
  6. Once the cake has cooled, pour the glaze evenly over the top, allowing it to drizzle down the sides.
