Philly Cheesesteak Meatloaf

Ingredients

For the Meatloaf:

  • 1 lb ground beef (85% lean)
  • 1/2 lb ground pork (optional, for added moisture)
  • 1 small onion, finely diced
  • 1 green bell pepper, finely diced
  • 8 oz mushrooms, finely chopped (optional)
  • 2 cloves garlic, minced
  • 1 cup shredded provolone or mozzarella cheese
  • 1/2 cup breadcrumbs
  • 2 eggs
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika

For the Topping:

  • 4 slices provolone or American cheese
  • Optional: sautéed onions and peppers for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
  2. In a skillet over medium heat, sauté onions, peppers, and mushrooms until softened (about 5–7 minutes). Add garlic and cook another 30 seconds. Let cool slightly.
  3. In a large mixing bowl, combine ground beef, pork (if using), sautéed veggies, cheese, breadcrumbs, eggs, ketchup, Worcestershire, salt, pepper, and paprika. Mix until just combined—don’t overwork.
  4. Shape the mixture into a loaf and place it in the prepared loaf pan.
  5. Bake for 35–40 minutes. Then, top with cheese slices and return to oven for 5–10 minutes, or until cheese is melted and meatloaf is cooked through (internal temp should reach 160°F / 71°C).
  6. Let the meatloaf rest for 5–10 minutes before slicing.

Optional: Serve topped with additional sautéed onions and peppers for an extra Philly-style finish.
