Perfectly Mini Doughnuts

Ingredients

  • 1 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1 large egg
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract

Instructions

  1. Mix dry ingredients
    In a medium bowl, whisk together flour, sugar, baking powder, and salt.
  2. Combine wet ingredients
    In another bowl, whisk milk, egg, melted butter, and vanilla until smooth.
  3. Make the batter
    Pour the wet ingredients into the dry ingredients. Stir gently until combined—do not overmix.
  4. Heat oil
    In a deep pan or pot, heat about 2 inches of oil to 350°F (175°C).
  5. Shape doughnuts
    Transfer batter to a piping bag or plastic bag with the corner snipped. Pipe small circles into the hot oil, or drop spoonfuls for doughnut holes.
  6. Fry
    Cook for 1–2 minutes per side until golden brown. Remove with a slotted spoon and drain on paper towels.
  7. Coat & serve
    While warm, roll in cinnamon sugar, dust with powdered sugar, or dip in glaze. Serve immediately for best texture.
