Perfectly Mini Doughnuts

INGREDIENTS

  • 1 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1 egg
  • 2 tbsp melted butter (plus more for brushing)
  • 1/2 tsp vanilla extract
  • Optional: pinch of nutmeg or cinnamon (for extra flavor)

For coating:

  • 1/2 cup granulated sugar
  • 1 tsp ground cinnamon
  • Melted butter for brushing (if baking)

INSTRUCTIONS

If using a mini doughnut pan (baked version):

  1. Preheat oven to 350°F (175°C). Lightly grease the mini doughnut pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, salt, and optional cinnamon/nutmeg.
  3. In another bowl, whisk milk, egg, melted butter, and vanilla.
  4. Add the wet ingredients to the dry ingredients and stir just until combined.
  5. Spoon or pipe the batter into the prepared doughnut pan, filling each mold about 3/4 full.
  6. Bake for 8–10 minutes or until the tops spring back when lightly pressed.
  7. Let cool for 5 minutes, then remove from the pan.
  8. While still warm, brush with melted butter and roll in cinnamon-sugar coating.

If frying:

  1. Heat oil in a deep pan to 350°F (175°C).
  2. Prepare the batter as above.
  3. Drop small spoonfuls or pipe dough into the oil (use a doughnut dispenser or piping bag).
  4. Fry until golden brown on both sides, about 1–2 minutes per side.
  5. Remove with a slotted spoon and drain on paper towels.
  6. Roll in cinnamon-sugar mixture while still warm.
