Perfectly Mini Doughnuts

Ingredients

  • 1 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup whole milk
  • 1 egg
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • Oil for frying (vegetable or canola)
  • Optional: Cinnamon sugar or powdered sugar for coating

Instructions

  1. In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, whisk the milk, egg, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Heat oil in a deep pan or pot to 350°F (175°C).
  5. Using a small cookie scoop or a teaspoon, carefully drop small amounts of batter into the hot oil. Fry in batches to avoid overcrowding.
  6. Fry each mini doughnut for about 1–2 minutes per side, or until golden brown.
  7. Remove with a slotted spoon and drain on a paper towel-lined plate.
  8. While still warm, roll the mini doughnuts in cinnamon sugar or dust with powdered sugar.
