Perfectly Mini Doughnuts

Ingredients

  • 1 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup whole milk
  • 1 egg
  • 2 tbsp unsalted butter, melted
  • 1/2 tsp vanilla extract
  • Oil for frying (vegetable or canola)
  • Optional: Cinnamon sugar or powdered sugar for coating

Instructions

  1. In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, whisk the milk, egg, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined — do not overmix.
  4. Heat oil in a deep pot to 350°F (175°C).
  5. Carefully drop small spoonfuls of batter into the hot oil. Fry in batches, turning occasionally, until golden brown (about 2-3 minutes).
  6. Use a slotted spoon to transfer the doughnuts to a paper towel–lined plate to drain excess oil.
  7. While warm, roll the mini doughnuts in cinnamon sugar or dust with powdered sugar.
  8. Serve fresh and enjoy!
