Perfectly Mini Doughnuts

Ingredients

  • 1 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1 egg
  • 2 tbsp unsalted butter, melted
  • 1/2 tsp vanilla extract
  • 1/4 tsp ground nutmeg (optional, for classic flavor)
  • Oil for frying (vegetable or canola)
  • Additional sugar or cinnamon sugar for coating

Instructions

  1. Make the batter:
    In a medium bowl, whisk together the flour, sugar, baking powder, salt, and nutmeg (if using). In another bowl, whisk together the milk, egg, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined — don’t overmix.
  2. Heat the oil:
    Pour oil into a deep pot or skillet to about 2 inches deep. Heat the oil to 350°F (175°C).
  3. Fry the doughnuts:
    Use a small cookie scoop or teaspoon to drop small spoonfuls of batter into the hot oil. Fry in batches, turning occasionally, until golden brown — about 1–2 minutes per side.
  4. Drain and coat:
    Remove the mini doughnuts with a slotted spoon and drain on paper towels. While still warm, roll them in granulated sugar or cinnamon sugar.
