Perfectly Grilled Chicken Wings

Ingredients

  • 2 pounds chicken wings (drumettes and flats)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper (optional, for heat)
  • Your favorite BBQ sauce or wing sauce (optional, for tossing or basting)
  • Fresh chopped parsley or green onions (optional, for garnish)

Instructions

  1. Prep the Wings: Pat the chicken wings dry with paper towels. This helps them crisp up on the grill.
  2. Season: In a large bowl, toss the wings with olive oil, salt, pepper, garlic powder, paprika, onion powder, and cayenne (if using). Make sure the wings are evenly coated.
  3. Preheat Grill: Preheat your grill to medium-high heat (about 375–400°F). If using a charcoal grill, prepare for indirect heat.
  4. Grill the Wings:
    • Place the wings on the grill grates over direct heat.
    • Grill for 20–25 minutes, turning every 5 minutes, until nicely charred and the internal temperature reaches 165°F.
    • Move to indirect heat if they begin to char too quickly before being cooked through.
  5. Sauce ‘Em Up (Optional): If using BBQ or wing sauce, toss the grilled wings in the sauce or brush them during the last few minutes of grilling for that sticky finish.
  6. Serve: Remove wings from grill, let rest a couple of minutes, then serve hot. Garnish with chopped parsley or green onions, if desired.
