PEPPERONI PIZZA PASTA

Ingredients

  • 12 oz (about 3 cups) pasta (penne or rotini works great)
  • 2 cups marinara or pizza sauce
  • 1½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1½ cups sliced pepperoni
  • 1 green bell pepper, diced (optional)
  • ½ red onion, sliced (optional)
  • 1 tsp Italian seasoning
  • Salt & pepper to taste
  • 1 tbsp olive oil
  • Crushed red pepper flakes (optional for heat)

Instructions

  1. Cook Pasta:
    Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Sauté Veggies (Optional):
    In a large skillet, heat olive oil over medium heat. Add the diced bell pepper and onion, and cook for 3–4 minutes until softened.
  3. Combine Sauce & Seasoning:
    Add marinara or pizza sauce to the skillet. Stir in Italian seasoning, salt, and pepper. Let simmer for 2–3 minutes.
  4. Add Pasta & Pepperoni:
    Stir in the cooked pasta and half of the pepperoni. Mix well to coat everything in the sauce.
  5. Cheesy Goodness:
    Sprinkle mozzarella and Parmesan cheeses evenly over the top. Add remaining pepperoni slices on top like a pizza.
  6. Bake or Broil (Optional):
    If your skillet is oven-safe, place it under the broiler for 2–3 minutes until the cheese is melted and bubbly. Otherwise, just cover the pan and let the cheese melt on low heat.
  7. Serve:
    Garnish with extra Parmesan, red pepper flakes, or fresh basil if desired. Dig in!
