Pecan Pie Brownies

INGREDIENTS

For the Brownie Layer:

  • 1 box (18.3 oz) brownie mix (or your favorite homemade brownie recipe)
  • Eggs, oil, and water as called for on the box

For the Pecan Pie Topping:

  • 1 cup light corn syrup
  • 1 cup brown sugar (light or dark)
  • 4 large eggs
  • ¼ cup unsalted butter, melted
  • 2 teaspoons vanilla extract
  • ½ teaspoon salt
  • 2 cups pecan halves

Instructions

  1. Prepare the Brownie Base:
    • Preheat your oven to 350°F (175°C).
    • Grease or line a 9×13-inch baking dish with parchment paper.
    • Prepare the brownie batter according to package instructions and pour it into the prepared pan.
    • Bake for 20–25 minutes, or until the brownies are just set (they will continue baking with the topping).
  2. Make the Pecan Pie Topping:
    • In a large bowl, whisk together corn syrup, brown sugar, eggs, melted butter, vanilla extract, and salt until well combined.
    • Stir in the pecan halves.
  3. Add the Topping and Bake Again:
    • Carefully pour the pecan pie mixture over the partially baked brownies.
    • Return to the oven and bake for another 25–30 minutes, or until the top is set and golden.
  4. Cool and Serve:
    • Allow the brownies to cool completely before cutting.
    • For clean slices, chill in the fridge for 1–2 hours before cutting with a sharp knife.
