Peanut Butter Blondies with Fudge Frosting

Ingredients

For the Blondies:

  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup light brown sugar, packed
  • 1/2 cup creamy peanut butter
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/4 tsp baking powder
  • 1/4 tsp salt

For the Fudge Frosting:

  • 1/4 cup unsalted butter
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup milk
  • 1 1/2 cups powdered sugar
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  2. In a medium bowl, whisk together melted butter and brown sugar until smooth. Stir in peanut butter, egg, and vanilla until well combined.
  3. Add flour, baking powder, and salt. Stir just until the flour disappears—do not overmix.
  4. Spread the blondie batter evenly into the prepared pan. Bake for 20–25 minutes, or until the center is set and a toothpick comes out with moist crumbs.
  5. While blondies cool, make the frosting: In a saucepan, melt the butter. Whisk in cocoa powder and milk, stirring until smooth. Bring to a gentle simmer, then remove from heat.
  6. Whisk in powdered sugar, vanilla, and salt until smooth and glossy. Let cool slightly.
  7. Spread fudge frosting over cooled blondies. Let set before slicing into squares.

Optional: Top with chopped peanuts, mini chocolate chips, or sea salt flakes for extra flair!
