Ingredients
For the Blondies:
- 1/2 cup (1 stick) unsalted butter, melted
- 1 cup light brown sugar, packed
- 1/2 cup creamy peanut butter
- 1 large egg
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1/4 tsp baking powder
- 1/4 tsp salt
For the Fudge Frosting:
- 1/4 cup unsalted butter
- 1/4 cup unsweetened cocoa powder
- 1/4 cup milk
- 1 1/2 cups powdered sugar
- 1/2 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
- In a medium bowl, whisk together melted butter and brown sugar until smooth. Stir in peanut butter, egg, and vanilla until well combined.
- Add flour, baking powder, and salt. Stir just until the flour disappears—do not overmix.
- Spread the blondie batter evenly into the prepared pan. Bake for 20–25 minutes, or until the center is set and a toothpick comes out with moist crumbs.
- While blondies cool, make the frosting: In a saucepan, melt the butter. Whisk in cocoa powder and milk, stirring until smooth. Bring to a gentle simmer, then remove from heat.
- Whisk in powdered sugar, vanilla, and salt until smooth and glossy. Let cool slightly.
- Spread fudge frosting over cooled blondies. Let set before slicing into squares.
Optional: Top with chopped peanuts, mini chocolate chips, or sea salt flakes for extra flair!
