- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup creamy peanut butter
- ⅓ cup brown sugar
- 2 ripe bananas (mashed)
- 2 large eggs
- ⅓ cup milk
- 1 tsp vanilla extract
- Optional: ¼ cup mini chocolate chips or chopped nuts
Instructions
- Preheat oven to 350°F (175°C). Line or grease a muffin tin.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In another large bowl, beat peanut butter and brown sugar until smooth.
- Add mashed bananas, eggs, milk, and vanilla to the peanut butter mixture and mix well.
- Gradually stir in the dry ingredients until just combined. Do not overmix.
- Fold in chocolate chips or nuts if using.
- Divide batter evenly into muffin cups (about ¾ full).
- Bake for 18–22 minutes or until a toothpick inserted in the center comes out clean.
- Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
