Peanut Butter Banana Muffins

INGREDENT

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup creamy peanut butter
  • ⅓ cup brown sugar
  • 2 ripe bananas (mashed)
  • 2 large eggs
  • ⅓ cup milk
  • 1 tsp vanilla extract
  • Optional: ¼ cup mini chocolate chips or chopped nuts

Instructions

  1. Preheat oven to 350°F (175°C). Line or grease a muffin tin.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another large bowl, beat peanut butter and brown sugar until smooth.
  4. Add mashed bananas, eggs, milk, and vanilla to the peanut butter mixture and mix well.
  5. Gradually stir in the dry ingredients until just combined. Do not overmix.
  6. Fold in chocolate chips or nuts if using.
  7. Divide batter evenly into muffin cups (about ¾ full).
  8. Bake for 18–22 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
