- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp salt
- 2 large eggs
- ½ cup vegetable oil (or melted butter)

- 2 cups fresh peaches (peeled & chopped) – can use canned/drained
- 1 cup chopped pecans
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a large bowl, whisk together flour, sugar, baking soda, cinnamon, and salt.
- In another bowl, beat the eggs, then mix in oil and vanilla.
- Add wet ingredients to the dry mixture and stir until just combined.
- Fold in the chopped peaches and pecans. Do not overmix.
- Pour the batter into the prepared loaf pan.
- Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
- Let bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
