Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • 2 large eggs
  • ½ cup vegetable oil (or melted butter)
  • 1 tsp vanilla extract
  • 2 cups fresh peaches (peeled & chopped) – can use canned/drained
  • 1 cup chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, sugar, baking soda, cinnamon, and salt.
  3. In another bowl, beat the eggs, then mix in oil and vanilla.
  4. Add wet ingredients to the dry mixture and stir until just combined.
  5. Fold in the chopped peaches and pecans. Do not overmix.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
